Who we serve

Restaurants & retail

Sales and district tax done correctly, payroll that survives scrutiny, and monthly numbers that show whether a location is working.

Restaurants and retail are cash-intensive, tax-intensive and margin-thin, which is an unfortunate combination. They are also among the most frequently audited businesses in California, because the CDTFA can compare reported sales against purchases and industry markups and see quickly when something does not reconcile.

Most of what goes wrong is not fraud. It is a point-of-sale system configured with one district rate, tips handled inconsistently, or comps and voids that never made it into the books properly.

Where we help

  • Sales tax and district tax: configuration, filing, and fixing allocation that has drifted
  • Use tax accrual on equipment and supplies bought out of state
  • Tip reporting and the payroll treatment that goes with it
  • Payroll, including LA and Santa Monica minimum wage rules and sick leave accrual
  • Worker classification for delivery drivers and contract staff
  • Location-level profit and loss, so multi-site operators can see which sites work
  • Prime cost tracking: food, beverage and labour as a percentage of sales
  • Inventory and waste controls that are realistic for a small operation
  • CDTFA audit representation when it comes to that

Common questions

Not answered here? Ask us directly: we would rather explain it than have you guess.

Why are restaurants audited so often?

Because the CDTFA can test them from the outside. Purchase records from suppliers, standard industry markups and reported sales should reconcile to each other, and when they do not, that is visible without ever entering the premises. Cash handling adds to it. None of this presumes wrongdoing, but it does mean documentation matters more in this sector than most.

Our POS calculates sales tax. Is that enough?

Only if it is configured for the right district, and this is a very common failure. A single flat rate applied across all sales, or a rate set from the business location rather than the delivery address for off-premise orders, produces a liability that compounds quietly. Check a handful of recent transactions against the CDTFA's published rate for the actual address. See our district tax page.

How should tips be handled?

It depends whether they are voluntary tips or mandatory service charges, and the distinction matters a great deal. Mandatory service charges are generally treated as wages: subject to payroll tax, and in many cases to sales tax as well. Getting this wrong creates exposure on two fronts at once. It is worth reviewing your current treatment rather than assuming it was set up correctly.

We have three locations. Can you show us which is profitable?

Yes, and it is usually the single most valuable reporting change a multi-site operator makes. It requires a chart of accounts structured by location and consistent allocation of shared costs, which is a set-up exercise, not a monthly burden. After that, location-level P&L comes out of the normal close.
